Still Austin Bourbon Tasting Notes

Appearance: Amber Brown

Nose: Rich spices, rye spice, cinnamon, anise, baking spice, toasted oak, light vanilla, light citrus, fresh wood

Palate: Caramel, butterscotch, vanilla, toasted oak, rye spice, rye grain, nutty, brown sugar, baking spice, cinnamon, nutmeg, orange citrus zest, chocolate notes, cherry, black pepper

Finish: Rich finish full of rye spice, caramel and butterscotch sweetness, fruit and black pepper

Is Still Austin Bourbon an Approachable Whiskey?

Still Austin definitely has a distinct flavor profile full of rich rye spices and caramel/butterscotch/brown sugar sweetness.

It’s got a bit of a punch to it, so I would recommend this one if you like bold heavy rye spice with nice baking spice, cinnamon, and nutmeg flavors.

Is Still Austin Bourbon Complex?

Still Austin offers a lot of complexity and depth of flavor especially in the rye spice lane.

It has extremely rich rye spice, rye grain, baking spice, and cinnamon nutmeg notes that are quite prominent in comparison to other bourbons with 20%+ rye in the mash bill.

It also has a nice sweetness to it that I would best explain as almost a brown sugar cinnamon toast with a bit of caramel and vanilla.

I wouldn’t go as far to say that this reminds me of a dessert whiskey, but it certainly has a nice sweetness that is pretty delightful to drink.

The Non-Chill filtering helps a lot with creating a nice oily mouthfeel that is full of flavor and creates a nice finish.

What are Still Austin Bourbon’s strongest attributes/flavors?

Still Austin is jam-packed with bold rye spice flavors and I don’t know if it’s just the Texas grown Elbon rye or possible the stark changes in weather fluctuation in Texas, but this is one of the boldest rye whiskeys I have tasted.

This is my first whiskey from Texas so I’ll have to try some more to see if this unique flavor profile is distinct to Texas or if it’s just the grain that Still Austin uses, but I’m definitely curious and will try to learn more.

Is Still Austin Bourbon a go-to whiskey?

If you’re a fan of rye-forward bourbon, this could definitely be a go-to whiskey for you.

It’s extremely rich in flavor and I would initially think that it would just be a rye whiskey, not a bourbon.

Then you take a sip and get all the nice caramel, butterscotch, and brown sugar sweetness that helps round out the bold rye grain and spice.

Still Austin delivers a lot of delicious flavor for an affordable price.

Is Still Austin Bourbon priced accurately to its quality?

Still Austin Bourbon is priced accurately to what it delivers.

It is one of the richest rye flavors I’ve gotten in a bourbon, even more so than some of the highest-rye bourbons I’ve tried in the past like Remus Highest Rye (which I really enjoy).

For just $45-50, this bottle offers exactly the amount of depth I would expect in this price range with the non-chill filtering just topping off the finish.

Conclusion for Still Austin Bourbon

Still Austin Bourbon is pretty delicious.

I wasn’t sure what to expect because this is from Texas and I’ve never seen it in my local liquor store in Pennsylvania.

I’ve always heard good things so when it finally showed up here, I grabbed this bottle up.

I can certainly tell there is something different about the Texas bourbon flavors in this bottle – but I’m not quite sure exactly what it is.

My guess would be that the Texas Rye Grain imparts a flavor profile that is much different than the rye grain grown in Kentucky.

I’d love to try some other offerings from Still Austin to see if the same flavors carry across their other editions.

I’ll certainly be keeping an eye out for more bottles from Still Austin because this bottle definitely has me curious about the upcoming Texas whiskey scene.

Ultimately, it’s a bottle with a lot of flavor for an affordable price.
