Palate: Rich caramel, vanilla, charred oak, pepper spice, hints of dark fruit and cinnamon, rye spice

Is Penelope Architect Build 7 an Approachable Whiskey?
Penelope Architect is an approachable whiskey with a bit of spice and heat on it.
The finish is still smooth and this pour is pretty easy to drink.
It might be a little hot for beginners at first, but the flavor is backed up and worth it.
Is Penelope Architect Build 7 Complex?
Penelope Architect Build 7 has a few layers of complexity.
It starts with your standard bourbon caramel, vanilla, and toasted oak.
It then has the addition of woody spice notes and hints of dark fruit from the French Oak Staves.
Overall, this is an extremely well-balanced bourbon that doesn’t stray too far from the traditional bourbon flavors.

Penelope Architect Build 7’s strongest attribute is its balance of flavors.
Just like in the image above, this bottle is extremely well-rounded with full flavors in every spectrum of traditional bourbon qualities.
Is Penelope Architect Build 7 a go-to whiskey?
Penelope Architect Build 7 is a great whiskey.
I wish this bottle were $45-50 and it’d be a lot easier to recommend as a go-to for me.
While I could easily drink this one often, the price and limited availability keep me saving this one for special occasions and to compare to other Penelope releases like my favorite – Penelope Toasted Series.
Is Penelope Architect Build 7 priced accurately to its quality?
Penelope Architect Build 7 is a great-tasting whiskey.
It’s smooth, full of flavor, and delivers a well-rounded experience that invites you to drink more.
I like that this is a limited release that is a different expression of their whiskey compared to my previously reviewed Penelope Architect Build 5 which was a bit more on the oak spectrum than fruit and spice.
If this bottle were $45-$50 I would probably buy 1 or 2 additional bottles just to have on my shelf.
Conclusion for Penelope Architect Build 7
Penelope Architect Build 7 is an extremely balanced pour.
If you like bourbons with a bit of spice without being too overpowering, this is a great option.
In a similar price range, I would also consider checking out New Riff Single Barrel Bourbon and Old Forester 1920 Bourbon.
