High West Cask Collection Cabernet Finish is an extremely approachable whiskey.
It has a lot of your traditional bourbon flavors and since it is finished in red wine Cabernet Sauvignon barrels, it picks up some nice and sweet fruit flavors that really round out the flavor profile.
This would be a perfect bourbon to bring to a dinner party where people like both wine and whiskey.
Is High West Cask Collection Bourbon – Cabernet Finish Complex?
High West Cask Collection Cabernet Finish has quite a few layers of flavor and complexity.
The nose is just wonderful and full of all your classic bourbon notes but with additional sweet candied red fruits on top.
On the palate, you get much of the same but with more of the bourbon characteristics shining forward like caramel, toasted oak, and vanilla followed by the sweeter candied fruits and powdered sugar notes.
The finish is quite nice as well.
It’s not overpowering and not a super long bold finish, but the flavors will sit in your mouth for quite a while after each sip.

High West Cask Collection Cabernet Finish’s strongest attribute is how well it balances blended bourbons with the sweet fruit notes of a Cabernet Sauvignon wine finish.

I could easily drink this bottle of High West Cask Collection Cabernet Finish on a regular basis.
Since it is a bit sweeter, it almost reminds me of a dessert whiskey (if that’s even a thing).
This is just a really easy whiskey to sip on and I could see the bottle going down quite quickly.

High West Cask Collection Cabernet Finish is definitely worth its price tag if you are a fan of wine or enjoy a sweeter bourbon flavor profile.

I think this bottle of High West Cask Collection Cabernet Finish is my favorite bottle I have purchased from High West so far.
I’ve written a High West Campfire Review and a High West Double Rye Rum Barrel Finish Review and while I did really enjoy the Rum Barrel Finish for its unique flavor profile, I think this bottle of Cabernet Finish Bourbon is my favorite.
This is just a really nice and balanced pour that satisfies my bourbon tastes with hints of my love of red wine.
So unless you’re someone who knows you don’t like additional sweetness on your bourbon, this is a recommended bottle from me.
I don’t know how many bottles will be released of this one so if you see it on the shelf, I would pick yourself up a bottle!
