Nose: Light caramel, brown sugar, toasted oak, vanilla, sugar cane, dark fruits, cherry, and oddly a hint of mustard
Palate: Sweet and sugary flavor right up front, the rum sugar cane really shines through. As the flavor settles, I get a bit of the dark fruits from the port and cabernet barrels, but not as much as I would have expected.
Finish: Long finish that leaves you with an interesting combination of sweet caramelized sugar cane that finishes with a bold rye spice and pepper

Barrell Dovetail is easy to drink.
It has a sweet sugar cane flavor to it from being finished in rum barrels that hits your taste buds on the first sip.
The bold rye spice and pepper on the finish may be a bit hot for beginners though.

Barrell Dovetail has quite a few layers of complexity to its flavor.
It starts with your typical sweeter caramel, vanilla, and toasted oak flavors.
Those are quickly overtaken by the sugar cane from the rum cask finish.
Your taste buds are then met with an interesting combination of bold sugar cane and equally bold rye spice and pepper.

At the $80 price tag though, I would lean more toward Barrell Seagrass or other bottles of equal price point.

Barrell Dovetail is priced a bit above what its quality delivers.
I can appreciate the unique blend of flavors in this whiskey, but they just don’t really line up for my taste.
If this were a $50 bottle, I would be much more likely to buy another bottle.

If you’re a fan of uniquely finished whiskey, this is a bottle that will really put your taste buds into a frenzy.
I will say, I do keep reaching for another sip as I try to decipher the flavors I’m getting.
